Abstrak (Abstracts)

Tujuan penelitian ini yaitu untuk (1) menganalisis posisi strategis Prodi Tata Boga; dan (2) merumuskan strategi peningkatan mutu lulusan Program Studi Tata Boga. Metode yang digunakan dalam penelitian ini adalah metode QSPM (Quantitative Strategic Planning Matrix) yaitu sebuah metode untuk menentukan prioritas alternatif strategi yang diperoleh dari analisa SWOT (Stengths, Weaknesses, Opportunities dan Threats). Hasil penelitian menunjukkan bahwa berdasarkan hasil analisis IE dapat diketahui bahwa posisi Prodi Tata Boga berada pada Kuadran V (hold and maintain) dengan nilai kordinat (2.606, 2.950) yang berarti sebaiknya dikelola dengan strategi penetrasi dan pengembangan. Sedangkan hasil analisa QSPM menunjukkan bahwa prioritas strategi untuk peningkatan mutu lulusan secara berturut-turut yaitu peningkatan akreditasi prodi (19.87), memperluas kerjasama (19.32), inisiasi unit produksi (19.1), evaluasi kurikulum (18.61), pengembangan kualitas SDM (18.09), pengusulan hibah sarpras (16.87), implementasi pendidikan karakter (15.25), dan peningkatan kapasitas keilmiahan mahasiswa (14.41).

This study aims to (1) analyze the strategic position of culinary art department; and (2) to determine the strategy of improving the quality of graduate in the culinary art department. The method used in this research is QSPM method (Quantitative Strategic Planning Matrix) which is an alternative method for determining the priority of the strategy derived from the SWOT (Strengths, Weaknesses, Opportunities, and Threats). The results showed that (1) based on the analysis of IE, it can be seen that the position of culinary art department is located in Quadrant V (hold and maintain) the value of the coordinate (2606, 2950), which means that should be managed by penetrating and development strategy. (2) While the results of the analysis QSPM indicated that the priority strategies for improving the quality of graduates in a row with the increasing of accreditation of study programs (19.87), extending cooperation (19:32), the initiation of the production unit (19.1), the evaluation of the curriculum (18.61), the development of quality human resources ( 18:09), proposing the grants of facilities and infrastructures (16.87), the implementation of educational character (15:25), and the increasing in capacity of students’ scientific (14:41).
