PEMBUATAN MINUMAN SUSU KEDELAI DENGAN PENAMBAHAN BUNGA TELANG (CLITORIA TERNATEA I) DI ERA PEMULIHAN PANDEMI COVID-19

Anggraeni, Tasya Faradillah. Making Soy Milk Drinks With the Addition of Telang Flowers (Clitoria Ternatea L) in the Recovery Era of the Covid-19 Pandemic. Final Project, Balikpapan: Culinary Study Program of Balikpapan State Polytechnic. The purpose of this study 1) To determine the process of processing soy milk drinks with the addition of telang flowers. 2) Knowing the level of consumer preference for soy milk health drinks with the addition of telang flower powder in terms of taste, aroma, and texture. 3) Knowing the hedonic quality test on soy milk health drink with the addition of telang flower in terms of color, taste, aroma, and texture. Data collection techniques used are literature study, experiment, questionnaire and documentation. The data obtained from the organoleptic test involving 25 panelists were analyzed descriptively. The results of the hedonic aspect test are categorized as blue with an average value of (3.48) F2 is categorized as blue with an average value of (4.16) and F3 is categorized as blue with an average value of (4.88). F1 is categorized as scented telang flower, with an average value of (2.60), F2 is categorized as scented telang flower, with an average value (3.20) and F3 is categorized as scented telang flower, with an average value of (3 ,52). The texture aspect of F1 is categorized based on the average value of telang flower (2.60), F2 is categorized as telang flower with an average value of (3.20) and F3 is categorized as fragrant telang flower with an average value of (3.52). The taste aspect is categorized as telang flower with an average value (2.56), F2 is categorized as telang flower with an average value (3.16) and F3 is categorized as telang flower with an average value (3.60). Tujuan penelitian ini 1) Mengetahui proses pengolahan minuman susu kedelai dengan penambahan bunga telang. 2) Mengetahui tingkat tingkat kesukaan konsumen terhadap minuman kesehatan susu kedelai dengan penambahan bubuk bunga telang segi warna, rasa, dan aroma, dan tekstur. 3) Mengetahui uji mutu hedonik pada minuman kesehatan susu kedelai dengan penambahan bunga telang segi warna, rasa, dan aroma, dan tekstur. Teknik pengumpulan data yang dilakukan yaitu studi kepustakaan kepustakaan, eksperimen, angket dan dokumentasi. Data yang terkumpul dari uji organoleptik yang melibatkan sebanyak 25 orang panelis dianalisis secara statistik deskriptif. Hasil uji hedonik aspek warna F1 dikategorikan berwarna biru dengan nilai rata-rata (3,48), F2 dikategorikan berwarna biru dengan nilai rata-rata (4,16) dan F3 dikategorikan berwarna biru dengan nilai rata-rata (4,88), aspek aroma F1 dikategorikan beraroma bunga telang dengan nilai rata-rata (2,60), F2 dikategorikan beraroma bunga telang dengan nilai rata-rata (3,20) dan F3 dikategorikan beraroma bunga telang dengan nilai rata-rata (3,52). Aspek tekstur F1 dikategorikan beraroma bunga telang dengan nilai rata-rata (2,60), F2 dikategorikan beraroma bunga telang dengan nilai rata-rata (3,20) dan F3 dikategorikan beraroma bunga telang dengan nilai rata-rata (3,52). Aspek rasa F1 dikategorikan berasa bunga telang dengan nilai rata-rata (2,56), F2 dikategorikan berasa bunga telang dengan nilai rata-rata (3,16) dan F3 dikategorikan berasa bunga telang dengan nilai rata-rata (3,60).
