GAMBARAN PERSONAL HYGIENE, SANITASI PERALATAN, SANITASI TEMPAT PENJUALAN PADA PEDAGANG NASI GORENG ARTOMORO

Yolinda Agung Ega Trisna, 2022. Gambaran Personal Hygiene, Sanitasi Peralatan Dan Sanitasi Tempat Penjualan Pada Pedagang Nasi Goreng Artomoro. Tugas Akhir, Program Studi Tata Boga Politeknik Negeri Balikpapan, 2022. Penelitian ini bertujuan untuk mengetahui 1. Gambaran personal hygiene pada pedagang Nasi Goreng Artomoro, 2. Gambaran sanitasi peralatan pada pedagang Nasi Goreng Artomoro, 3. Gambaran sanitasi tempat penjualan pada pedagang Nasi Goreng Artomoro. Jenis penelitian yang dilakukan adalah deskriptif kualitatif dengan teknik observasi, dokumentasi dan wawancara mendalam dengan 4 orang informan. Data yang terkumpul dianalisa secara deskriptif dengan teknik reduksi data, penyajian data dan penarikan kesimpulan. Hasil penelitian personal hygiene menyatakan 50%, 2 responden yang tidak menjaga kebersihan diri dengan baik, 4 responden menyatakan 100% rutin memotong kuku dan mandi dua kali sehari. Sanitasi peralatan menyatakan 50%, 2 responden menjaga kebersihan peralatan dengan baik. Sanitasi tempat penjualan menyatakan 75%, 3 responden sudah menjaga kebersihan area jualan dan makan dengan baik dan mejaga kebersihan lantai, dinding. Saran: sebaiknya pedagang dapat mencegah terjadinya penularan penyakit yang disebabkan oleh serangga, menggunakan tempat sampah yang tertutup. Overview of Personal Hygiene, Equipment Sanitation and Sales Place Sanitation at Artomoro Fried Rice Traders. Final Project, Balikpapan State Polytechnic Culinary Study Program, 2022. This study aims to determine 1. An overview of personal hygiene at Nasi Goreng Artomoro traders, 2. An overview of equipment sanitation at Nasi Goreng Artomoro traders, 3. An overview of sanitation at the selling point of Nasi Goreng Artomoro. The type of research conducted is descriptive qualitative with observation, documentation and in-depth interviews with 4 informants. The collected data were analyzed descriptively with data reduction techniques, data presentation and conclusion drawing. The results of the personal hygiene study stated that 50%, 2 respondents who did not maintain good personal hygiene, 4 respondents said 100% routinely cut nails and bathed twice a day. Equipment sanitation states 50%, 2 respondents maintain the cleanliness of the equipment well. Sanitation at the point of sale stated that 75%, 3 respondents had maintained the cleanliness of the selling and eating areas well and kept the floors and walls clean. Suggestion: traders should be able to prevent disease transmission caused by insects, using closed trash cans. Keywords: Personal hygiene, Equipment Sanitation, Place Sanitation
