SUBSTITUSI MADU PADA PEMBUATAN SIRUP BROKOLI (FAMILY BRASSICACEAE)

Abstrak (Abstracts)

Subtitution Honey in the Makin Syrup Broccoli (Family Brassicaceae). Final Project, Food and Beverage Departement Polytechnic of Balikpapan. The study aims 1) to find out how the processing syrup made from vegetable broccoli with substitution of honey, 2) to prove that the substitution of honey with vegetables broccoli can be processed into a syrup, 3) to tell the extent of the favorite color, texture, aroma and flavor of substitution of honey in the manufacture of syrup broccoli, 4) for quality testing to color, texture, aroma and flavor on the product substitution of honey in the making of syrup broccoli. This type of research is experiments research and test organoleptic. This research involved 25 of 44 students and using the panelists was trained from students in the first 6 years 2014 the department of food Polytechnic Balikpapan. The data collected from the test organoleptic to be analyzed statistically descriptive of using the program SPSS 20.0 For Windows. Based on the results of studies showed that broccoli can be used as an ingredient in making syrup. The results of the hedonic aspects of color, texture, scent and flavor of syrup broccoli with honey obtained the average value of 3.88 to color which means the panelists like, 3.40 of texture which means his panelists, 3.16 of aroma which means the panelists a bit like and 3.00 which means the panelists a bit like syrup broccoli with honey. The results of the quality of hedonic get the average value of 3.44 which means the syrup has the color is rather interesting, 3.55 which means the texture of thick, 3.77 which means the aroma of fresh and 2.68 which means the syrup has a good Subtitusi Madu Pada Pembuatan Sirup Brokoli (Family Brassicaceae). Penelitian ini bertujuan 1) untuk mengetahui bagaimana proses pengolahan sirup berbahan dasar sayur brokoli dengan substitusi madu, 2) untuk membuktikan bahwa substitusi madu dengan sayuran brokoli dapat diolah menjadi sirup, 3) untuk mengetahui tingkat kesukaan warna, tekstur, aroma dan rasa dari substitusi madu pada pembuatan sirup brokoli, 4) untuk mengetahui pengujian mutu terhadap warna, tekstur, aroma dan rasa pada produk subtitusi madu pada pembuatan sirup brokoli. Jenis penelitian yang digunakan yaitu penelitian eksperimen dan uji organoleptik. Penelitian ini melibatkan 25 dari 44 mahasiswa dan menggunakan panelis agak terlatih dari mahasiswa semester 6 tahun 2014 jurusan Tata boga Politeknik Negeri Balikpapan. Data yang terkumpul dari uji organoleptik akan dianalisis secara statistik deskriptif menggunakan program SPSS 20.0 For Windows. Berdasarkan hasil penelitian menunjukkan bahwa brokoli dan madu dapat dijadikan sebagai bahan dalam pembuatan sirup. Hasil penilaian uji hedonik dari aspek warna, tekstur, aroma dan rasa terhadap sirup brokoli dengan madu didapatkan nilai rata-rata 3.88 terhadap warna yang artinya panelis suka, 3.40 terhadap tekstur yang artinya panelis suka, 3.16 terhadap aroma yang artinya panelis agak suka dan 3.00 yang artinya panelis agak suka terhadap produk sirup brokoli dengan madu. Hasil penilaian dari uji mutu hedonik mendapatkan nilai rata-rata 3.44 yang artinya sirup memiliki warna agak menarik, 3.52 yang artinya tekstur kental, 3.77 yang artinya aroma segar dan 2.68 yang artinya sirup memiliki rasa yang enak
