Penambahan Keong Mas (Pomacea canaliculata Lamarck) Pada Pembuatan Pasta Ravioli

ABSTRACT Mega. The Addition of a Golden Snail to The Ravioli Paste, Final Project, Balikpapan, Food and Baverage Department, State Polytechnic of Balikpapan, 2018. The purposes of this study are (1) to find out if the golden snail can be used as an additional ingredient in the manufacture of ravioli paste. (2) to know the process of making ravioli paste with the addition of golden snail. (3) to know the hedonic test and hedonic quality test on color, aroma, texture and taste aspect in making ravioli paste with addition of golden snail. The type of research used there are two stages of preliminary research and further research with the addition of golden snail as much as 20%, 30% and 40%. Hedonic testing and hedonic quality in this study involved 5 limited panelists who have been analyzed and the results using SPSS 24.0 For Windows. Best hedonic test result on color aspect of 4,60, aroma of 4,60, texture of 4,80 and taste of 4,60 panelis like with formula paste F2. While the result of hedonic quality test of formula F3 get the best value on color aspect of 4,40, aroma of 4,80, texture of 4,80 and taste of 4,60. ABSTRACT Mega.
