PEMANFAATAN MANDAI MENJADI BAHAN DASAR DALAM PEMBUATAN ABON

Latif Sabirul Bahri, Utilization of Marking as a Basic Material in Making Abon. Final Project, Tata Study Program of Balikpapan State Polytechnic, 2018. The purpose of this study was to find out how to process Mandai, whether mandai can be used as a basic material in making shredded, to calculate the hedonic test and hedonic quality using SPSS 24.0 for Windows. This study involved 25 rather trained panelists to conduct quality tests and hedonic tests. Overall this research was conducted from June to August 2018. Based on the statistical results of the hedonic test, the average score was 3.76 colors, 3.64 scents, 3.80 flavors and 3.64 textures. Whereas based on statistical results on the hedonic quality test on the aspect of color obtained an average value of 3.84 stated brown, for the aroma aspect 4.32 stated the typical mandai, for the texture aspect 3.36 stated rather fibrous, and for the aspect of flavor 3.32 stated rather salty. Tujuan penelitian ini adalah untuk mengetahui cara pengolahan Mandai, apakah mandai dapat dijadikan bahan dasar dalam pembuatan abon, untuk menghitung uji hedonik dan mutu hedonik yaitu menggunakan SPSS 24.0 for Windows. Penelitian ini melibatkan 25 panelis agak terlatih untuk melakukan uji mutu dan uji hedonik. Secara keseluruhaan penelitian ini di lakukan pada bulan Juni sampai dengan bulan Agustus 2018. Berdasarkan hasil statistik pada uji hedonik didapatkan nilai rata-rata yaitu 3,76 warna, 3,64 aroma, 3,80 rasa dan 3,64 tekstur. Sedangkan berdasarkan hasil statistik pada uji mutu hedonik pada aspek warna didapatkan nilai rata-rata yaitu 3,84 menyatakan kecoklatan, untuk aspek aroma 4,32 menyatakan khas mandai, untuk aspek tekstur 3,36 menyatakan agak berserat, dan untuk aspek rasa 3,32 menyatakan agak asin.Keyword : Mandai, Abon, Hedonic Test and Hedonic Quality Test
