PEMBUATAN ORANGE COTTON CAKE

ABSTRACT Gili Nirmala, Making Orange Cotton Cake, Final Project, Culinary Study Program, Balikpapan State polytechnic, 2020. The purpose of this research is 1) describes how to make an orange cotton cake 2) to find out the hedonic test on orange cotton cake products 3) to determine the hedonic quality test of the orange cotton cake product in terms of color, texture, aroma and taste. This research uses experimental research. The first stage is a preliminary research by testing the orange cotton cake recipe. The second stage is further research by distributing hedonic test questionnaires and hedonic quality test questionnaires to 5 limited panelists and it can be concluded that based on the results of the hedonic test and hedonic quality test conducted by the author to limited panelists as many as 5 people on orange cotton cake products and can It is concluded that the F3 formula is very popular because in terms of color, texture, aroma and taste produced is very good and based on the results of the data normality test it can be concluded that the data obtained is not normal because the F value does not exceed 0.05 and cannot use anova as an average. average of data analysis so that the authors conducted the Friedman test. Penelitian ini menggunakan penelitian eksperimen. Tahap pertama yaitu penelitian pendahuluan dengan menguji resep orange cotton cake. Tahap kedua yaitu penelitian lanjutan dengan menyebar angket uji hedonik dan angket uji mutu hedonik kepada panelis terbatas yang berjumlah 5 orang dan dapat disimpulkan bahwa berdasarkan hasil uji hedonik dan uji mutu hedonik yang dilakukan penulis kepada panelis terbatas sebanyak 5 orang pada produk orange cotton cake dan dapat disimpulkan bahwa formula F3 sangat disukai karena dari segi warna, tekstur, aroma dan rasa yang dihasilkan sangat bagus serta berdasarkan hasil uji normalitas data dapat disimpulkan bahwa data yang diperoleh tidak normal dikarenakan F value tidak melebihi 0,05 dan tidak dapat menggunakan anova sebagai rata-rata terhadap analisis data sehingga penulis melakukan uji friedman.
